Peanut Butter Balls

Ingredients:
1 cup creamy peanut butter 🥜
2 cups powdered sugar 🍬
½ cup unsalted butter, softened 🧈
1 tsp vanilla extract 🍦
2 cups semi-sweet chocolate chips 🍫
1 tbsp coconut oil (optional, for smoother chocolate coating) 🥥
Instructions:
1️⃣ Mix the peanut butter base:
In a large bowl, combine peanut butter, softened butter, vanilla extract, and powdered sugar. Mix until smooth and well blended. 🍯✨
2️⃣ Shape into balls:
Scoop about 1 tablespoon of the mixture and roll it into small balls. Place them on a baking sheet lined with parchment paper. Repeat until all the mixture is used. 🍬
3️⃣ Chill the balls:
Place the baking sheet in the freezer for about 30 minutes to firm up the peanut butter balls. ❄️
4️⃣ Melt the chocolate:
In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second intervals, stirring after each, until smooth. Alternatively, use a double boiler. 🍫
5️⃣ Dip the balls in chocolate:
Use a fork or toothpick to dip each peanut butter ball into the melted chocolate, ensuring it’s fully coated. Let any excess chocolate drip off. Place back on the parchment paper. 🎨
6️⃣ Set the chocolate:
Refrigerate the chocolate-coated peanut butter balls for 15-20 minutes, or until the chocolate hardens. ❄️
7️⃣ Serve and enjoy:
Store in an airtight container in the fridge or at room temperature. These are perfect as a treat or for gifting! 🎁🍬
