Ingredients:
1 cup creamy peanut butter
2 cups powdered sugar
½ cup unsalted butter, softened
1 tsp vanilla extract
2 cups semi-sweet chocolate chips
1 tbsp coconut oil (optional, for smoother chocolate coating)
Instructions:
Mix the peanut butter base:
In a large bowl, combine peanut butter, softened butter, vanilla extract, and powdered sugar. Mix until smooth and well blended.
Shape into balls:
Scoop about 1 tablespoon of the mixture and roll it into small balls. Place them on a baking sheet lined with parchment paper. Repeat until all the mixture is used.
Chill the balls:
Place the baking sheet in the freezer for about 30 minutes to firm up the peanut butter balls.
Melt the chocolate:
In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second intervals, stirring after each, until smooth. Alternatively, use a double boiler.
Dip the balls in chocolate:
Use a fork or toothpick to dip each peanut butter ball into the melted chocolate, ensuring it’s fully coated. Let any excess chocolate drip off. Place back on the parchment paper.
Set the chocolate:
Refrigerate the chocolate-coated peanut butter balls for 15-20 minutes, or until the chocolate hardens.
