(Apple and Mascarpone Fondant)
Ingredients:
4 large apples (such as Golden Delicious), peeled, cored, and thinly sliced
1 cup mascarpone cheese
½ cup granulated sugar
3 large eggs
1 tsp vanilla extract
½ cup all-purpose flour
1 tsp baking powder
¼ cup milk
2 tbsp unsalted butter (for greasing)
1 tbsp powdered sugar (for dusting, optional)
Instructions:
Preheat the oven:
Preheat your oven to 350°F (180°C). Grease a 9-inch round cake pan with butter and line the bottom with parchment paper.
Prepare the batter:
In a mixing bowl, whisk together the mascarpone, sugar, eggs, and vanilla extract until smooth and creamy.
Combine dry ingredients:
In a separate bowl, sift together the flour and baking powder. Gradually add the dry mixture to the wet mixture, alternating with the milk, and mix until just combined.
Layer the apples:
Spread half of the sliced apples evenly in the prepared cake pan. For half of the batter over the apples. Add the remaining apple slices on top, then pour the remaining batter over them.
Bake the fondant:
Bake in the preheated oven for 40–45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Cool and serve:
Allow the fondant to cool slightly before removing it from the pan. Dust with powdered sugar before serving, if desired. Enjoy warm or at room temperature!
