1οΈβ£ Prepare the Sponge Cake:
Preheat your oven to 350Β°F (175Β°C). Grease and line two 8-inch round cake pans with parchment paper.
In a bowl, sift together flour, baking powder, and salt. Set aside.
In a large mixing bowl, whisk the eggs and sugar on high speed until pale and fluffy (about 5-6 minutes). Add the vanilla extract. Gradually fold in the dry ingredients, alternating with the milk and melted butter, until just combined. Pour the batter evenly into the prepared pans. π₯πΎ
2οΈβ£ Bake the Cake:
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely. βοΈ
3οΈβ£ Prepare the Whipped Cream Frosting:
In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract on medium-high speed until stiff peaks form. Be careful not to overwhip. π₯π¬
4οΈβ£ Assemble the Cake:
Place one cake layer on a serving plate. Spread a layer of whipped cream evenly over the top. Add a layer of mixed fruits, arranging them as desired. Place the second cake layer on top and frost the entire cake with whipped cream. Use a spatula to smooth the sides and top. πβ¨
5οΈβ£ Decorate:
Top the cake with more fresh fruits, arranging them beautifully for presentation. Optionally, chill the cake for 30 minutes to let the whipped cream set before serving.
