Ingredients:
For the chicken:
4 boneless, skinless chicken breasts (about 1.5 lbs)
1 cup Caesar dressing (use your favorite brand)
½ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried parsley
½ teaspoon black pepper
For the topping:
½ cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
1 cup panko breadcrumbs (optional for crunch)
For garnish:
Fresh parsley, chopped
Instructions:
Preheat the oven.
Set your oven to 375°F (190°C). Lightly grease a baking dish large enough to fit the chicken breasts in a single layer.
Prepare the chicken.
Place the chicken breasts in the baking dish. Pat them dry with a paper towel and season lightly with black pepper.
Make the Parmesan sauce.
In a medium bowl, mix Caesar dressing, grated Parmesan cheese, garlic powder, and dried parsley. Spread this mixture evenly over the chicken breasts, ensuring they’re well coated.
Add the topping.
Sprinkle shredded mozzarella and additional Parmesan over the coated chicken. For a crispy topping, sprinkle panko breadcrumbs on top as well.
Bake the chicken.
Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly and golden.
Garnish and serve.
Let the chicken rest for 5 minutes. Garnish with freshly chopped parsley and serve warm with your favorite sides, such as roasted vegetables or a green salad.
