Ingredients:
For the salmon patties:
500 g (1 lb) cooked salmon (fresh or canned), flaked
1 cup (100 g) breadcrumbs (panko works best)
2 large eggs, lightly beaten
1 small red onion, finely chopped
2 garlic cloves, minced
½ cup (75 g) crumbled feta cheese
2 tbsp fresh parsley, chopped
2 tbsp fresh dill, chopped (optional)
1 tbsp lemon juice
1 tsp lemon zest
½ tsp dried oregano
Salt and pepper, to taste
2 tbsp olive oil, for frying
For serving (optional):
Tzatziki sauce or Greek yogurt dip
Lemon wedges
Fresh greens or pita bread
Instructions:
Step 1: Prepare the Mixture
In a large bowl, combine the flaked salmon, breadcrumbs, eggs, red onion, garlic, feta cheese, parsley, dill, lemon juice, lemon zest, oregano, salt, and pepper. Mix well until all ingredients are evenly incorporated.
Using your hands, form the mixture into 6-8 patties, about 2 cm (¾ inch) thick. Place the patties on a plate and refrigerate for 15-20 minutes to firm up.
Step 2: Cook the Salmon Patties
Heat olive oil in a large skillet over medium heat. Once hot, add the salmon patties in batches. Cook for 3-4 minutes per side, or until golden brown and crispy on the outside.
Transfer the cooked patties to a paper towel-lined plate to drain excess oil.
Step 3: Serve
Serve the Mediterranean salmon patties warm with tzatziki sauce, a squeeze of fresh lemon juice, and a side of greens or pita bread for a complete meal.
