Ingredients:
1 lb (450g) fresh asparagus, trimmed and cut into 2-inch pieces
2 cups mushrooms, sliced (button or cremini)
2 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
1 tsp soy sauce (optional, for flavor)
½ tsp black pepper
½ tsp salt
1 tsp lemon juice (optional)
Instructions:
Prepare the asparagus and mushrooms:
Wash and trim the asparagus by snapping off the woody ends. Slice the mushrooms.
Heat the skillet:
Heat olive oil and butter in a large skillet over medium heat until melted.
Cook the mushrooms:
Add the sliced mushrooms to the skillet. Sauté for 5-6 minutes, stirring occasionally, until they release their moisture and turn golden brown.
Add the asparagus and garlic:
Stir in the asparagus pieces and minced garlic. Cook for another 4-5 minutes, or until the asparagus is tender-crisp.
Season and finish:
Sprinkle with salt, pepper, and soy sauce (if using). Toss to coat evenly. For a fresh zing, drizzle with lemon juice before serving.
Serve:
Transfer to a serving dish and enjoy as a side dish for chicken, steak, or fish!
