Ingredients:
1 lb (450 g) ground beef or turkey 
1 packet (1 oz) taco seasoning 
1 cup salsa 
1 can (14 oz) black beans, drained and rinsed 
1 can (14 oz) corn kernels, drained 
8 flour tortillas (8-inch size) 
2 cups shredded Mexican blend cheese 
1 can (10 oz) enchilada sauce 
Optional toppings:
Sour cream 
Sliced avocado 
Chopped cilantro 
Diced tomatoes 
Sliced jalapeños 
Instructions:
Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish. 
In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain any excess fat. Stir in the taco seasoning, salsa, black beans, and corn. Cook for another 2-3 minutes to combine the flavors. 


Spread a thin layer of enchilada sauce on the bottom of the baking dish. Place 2 tortillas over the sauce, overlapping them slightly. Add a layer of the beef mixture, followed by a sprinkle of cheese. Repeat the layers (tortillas, beef mixture, cheese, and enchilada sauce) until all the ingredients are used, ending with cheese on top. 

Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly. 

Let the taco lasagna rest for 5 minutes before slicing. Garnish with your favorite toppings like sour cream, avocado, cilantro, or jalapeños. Serve warm and enjoy this flavorful fusion dish!
