Ingredients:
For the brownie base:
1 box brownie mix (plus ingredients listed on the package)
½ cup caramel sauce (store-bought or homemade)
For the cheesecake filling:
16 oz (450 g) cream cheese, softened
¾ cup granulated sugar
2 large eggs
1 tsp vanilla extract
For the caramel topping:
½ cup caramel sauce
¼ cup heavy cream
Optional: chocolate shavings, chopped nuts, or extra caramel drizzle for garnish
Instructions:
Prepare the Brownie Base:
Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper. Prepare the brownie mix according to package instructions. Pour the batter into the prepared pan and bake for 20-25 minutes, or until the edges are set but the center is still slightly soft. Remove from the oven and drizzle the caramel sauce over the brownie layer. Let cool while you prepare the cheesecake filling.
Make the Cheesecake Filling:
In a large bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Assemble the Cheesecake:
Pour the cheesecake mixture over the cooled brownie base, spreading it evenly. Tap the pan gently on the counter to remove any air bubbles.
Bake the Cheesecake:
Reduce the oven temperature to 325°F (160°C). Bake the cheesecake for 40-45 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly open.
Chill:
Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight, to set completely.
Add the Caramel Topping:
In a small saucepan, warm the caramel sauce and heavy cream over low heat, stirring until smooth. Pour the caramel topping over the chilled cheesecake and spread it evenly.
Garnish and Serve:
Top with chocolate shavings, chopped nuts, or an extra drizzle of caramel, if desired. Slice and enjoy this decadent dessert!
