Ingredients:
For the casserole:
500 g (1 lb) ground beef
1 small onion, finely chopped
1 packet (30 g) taco seasoning
1 cup (240 ml) salsa
1 cup (240 ml) canned black beans or pinto beans, rinsed and drained
1 cup (240 ml) corn kernels (fresh, frozen, or canned)
2 cups (200 g) shredded Mexican blend or cheddar cheese
4 cups (120 g) crushed tortilla chips (or small bags of Fritos)
Optional toppings:
Chopped lettuce
Diced tomatoes
Sliced black olives
Sour cream
Guacamole or avocado slices
Jalapeño slices
Instructions:
Step 1: Preheat the Oven
Preheat your oven to 180°C (350°F). Lightly grease a 9×13-inch casserole dish.
Step 2: Cook the Beef Mixture
In a large skillet over medium heat, sauté the ground beef and onion until the beef is browned and fully cooked. Drain any excess grease.
Stir in the taco seasoning, salsa, beans, and corn. Cook for 2-3 minutes until heated through.
Step 3: Assemble the Casserole
Spread half of the crushed tortilla chips evenly across the bottom of the prepared casserole dish.
Layer the beef mixture on top of the chips, spreading it out evenly.
Sprinkle the shredded cheese over the beef mixture, then top with the remaining crushed chips.
Step 4: Bake the Casserole
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Step 5: Add Toppings and Serve
Remove the casserole from the oven and let it cool for a few minutes. Add your favorite toppings, such as lettuce, tomatoes, sour cream, or guacamole, just before serving.
