Ingredients:
1 lb (450 g) steak (sirloin, ribeye, or strip steak), cut into bite-sized pieces

1 lb (450 g) baby potatoes, halved

3 tbsp olive oil

4 tbsp unsalted butter, divided

4 cloves garlic, minced

1 tsp smoked paprika

1 tsp Italian seasoning

Salt and pepper, to taste

2 tbsp fresh parsley, chopped (for garnish)

Instructions:

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the baby potatoes, cut side down. Season with salt, pepper, and smoked paprika. Cook for 6-8 minutes, stirring occasionally, until golden and fork-tender. Remove from the skillet and set aside.

In the same skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the steak pieces, season with salt, pepper, and Italian seasoning, and sear for 2-3 minutes per side until browned. Remove the steak and set aside.

Reduce the heat to medium. Add 3 tablespoons of butter to the skillet. Stir in the minced garlic and cook for 1-2 minutes until fragrant. Scrape up any browned bits from the bottom of the pan for extra flavor.

Return the cooked potatoes and steak to the skillet. Toss everything in the garlic butter sauce to coat well. Cook for another 2-3 minutes to heat through. Adjust seasoning with more salt and pepper if needed.

Garnish with fresh parsley and serve hot. Pair with a fresh salad or steamed vegetables for a complete meal. Enjoy!
