500 g (1 lb) sirloin steak, cut into bite-sized cubes
3 tablespoons butter
2 cloves garlic, minced
1 teaspoon olive oil
Salt and pepper to taste
1 teaspoon paprika
1 teaspoon dried thyme or parsley
For the Parmesan Cream Sauce:
2 tablespoons butter
1 tablespoon all-purpose flour
1 cup heavy cream
½ cup chicken or beef broth
¾ cup freshly grated Parmesan cheese
1 teaspoon garlic powder
Salt and pepper to taste
Optional: a pinch of crushed red pepper flakes for spice
Instructions:
Prepare the steak bites:
Season the steak cubes with salt, pepper, paprika, and thyme. Heat olive oil in a large skillet over medium-high heat.
Add the steak cubes and sear for 2-3 minutes on each side until golden brown. Cook in batches if needed to avoid overcrowding. Remove the steak bites and set aside.
Make the garlic butter:
In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Return the steak bites to the skillet and toss to coat them in the garlic butter. Remove from heat and keep warm.
Prepare the Parmesan cream sauce:
In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
Gradually whisk in the heavy cream and broth, ensuring a smooth consistency. Cook for 3-4 minutes until slightly thickened.
Stir in the Parmesan cheese, garlic powder, salt, and pepper. Mix until the cheese is melted and the sauce is creamy. Add red pepper flakes if desired.
Combine and serve:
Pour the Parmesan cream sauce over the steak bites or serve it on the side for dipping. Garnish with fresh parsley if desired. Serve hot with mashed potatoes, rice, or crusty bread.
