(A decadent combination of fudgy brownies, creamy peanut butter, and rich chocolate glaze—perfect for cookie lovers and dessert enthusiasts alike!)
Ingredients:
For the cookies:
1 box (432 g or 15.25 oz) brownie mix
2 large eggs
60 ml (¼ cup) vegetable oil
2 tbsp water
For the peanut butter filling:
240 g (1 cup) creamy peanut butter
120 g (1 cup) powdered sugar
For the chocolate glaze:
150 g (1 cup) semi-sweet chocolate chips
1 tbsp vegetable oil or butter
Instructions:
Step 1: Prepare the Cookie Dough
Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper or a silicone mat.
In a mixing bowl, combine the brownie mix, eggs, vegetable oil, and water. Stir until a thick dough forms.
Step 2: Shape and Bake the Cookies
Scoop the dough into 1.5-inch balls and place them on the prepared baking sheet, spacing them about 5 cm (2 inches) apart.
Flatten each dough ball slightly with your hand. Bake for 10-12 minutes, or until the edges are set but the centers are slightly soft.
Remove from the oven and let the cookies cool completely on the baking sheet.
Step 3: Make the Peanut Butter Filling
In a small bowl, mix the peanut butter and powdered sugar until a smooth, pliable dough forms. Roll the mixture into small balls, about 1 teaspoon each.
Step 4: Assemble the Cookies
Once the cookies are cool, press a peanut butter ball gently into the center of each cookie. Flatten slightly to adhere.
Step 5: Make the Chocolate Glaze
In a microwave-safe bowl, melt the chocolate chips and oil in 20-second intervals, stirring until smooth and glossy.
Drizzle or spoon the melted chocolate over the peanut butter filling on each cookie.
Step 6: Chill and Serve
Place the cookies in the refrigerator for 10-15 minutes to set the chocolate. Serve and enjoy these rich, indulgent treats!
