For the sandwich:
4 slices of bread (white, wheat, or sourdough)
2 lettuce leaves (optional)
Instructions:
Prepare the eggs: Mash the hard-boiled eggs with a fork until they reach your desired texture (chunky or smooth).
Make the egg salad: In a mixing bowl, combine the mashed eggs with mayonnaise, Dijon mustard, lemon juice, chopped chives or parsley (if using), salt, and pepper. Mix until well combined.
Toast the bread (optional): Lightly toast the bread slices if desired for added texture.
Assemble the sandwich: Place a lettuce leaf on a slice of bread (optional), spread a generous layer of egg salad over it, and top with another slice of bread. Repeat for the second sandwich.
