Cajun Shrimp and Salmon with Garlic Cream Sauce

Ingredients:
2 salmon fillets (approximately 6 ounces each) 🐟
8 large shrimp, peeled and deveined 🍤
2 tablespoons Cajun seasoning 🌶️
2 tablespoons olive oil 🫒
3 cloves garlic, minced 🧄
1 cup heavy cream 🥛
1/2 cup chicken broth 🍗
1/2 cup grated Parmesan cheese 🧀
2 cups fresh spinach leaves 🥬
Salt and freshly ground black pepper, to taste 🧂
Fresh parsley, chopped (for garnish) 🌿
Lemon wedges, for serving 🍋
Instructions:
1️⃣ Season the Seafood:
Pat the salmon fillets and shrimp dry with paper towels.
Sprinkle 1 tablespoon of Cajun seasoning over the salmon fillets and shrimp, ensuring an even coating.
2️⃣ Sear the Salmon:
In a large skillet over medium-high heat, add 1 tablespoon of olive oil.
Once the oil is hot, place the salmon fillets skin-side down (if skin is on) and sear for 4-5 minutes per side until cooked through and golden brown.
Remove the salmon from the skillet and set aside.
3️⃣ Sear the Shrimp:
In the same skillet, add the remaining 1 tablespoon of olive oil.
Add the shrimp and cook for 2-3 minutes per side until pink and opaque.
Remove the shrimp from the skillet and set aside.
4️⃣ Prepare the Garlic Cream Sauce:
Reduce the heat to medium and add the minced garlic to the skillet. Sauté for about 30 seconds until fragrant.
Pour in the heavy cream and chicken broth, stirring to combine.
Bring the mixture to a simmer, then reduce the heat to low.
Stir in the remaining 1 tablespoon of Cajun seasoning and grated Parmesan cheese. Continue to cook, stirring occasionally, until the sauce thickens slightly, about 3-5 minutes.
5️⃣ Add Spinach and Combine:
Add the fresh spinach leaves to the sauce, stirring until they wilt.
Return the salmon fillets and shrimp to the skillet, spooning the sauce over them to coat.
Allow everything to simmer together for 2-3 minutes to meld the flavors.
6️⃣ Serve:
Transfer the salmon and shrimp to serving plates, spooning additional sauce over the top.
Garnish with chopped fresh parsley and serve with lemon wedges on the side.
This dish pairs well with creamy mashed potatoes and sautéed green beans.
