Ingredients:
500g beef (tenderloin or sirloin), thinly sliced

3 large onions, sliced

2 cloves garlic, minced

3 tbsp soy sauce

1 tbsp oyster sauce (optional)

1 tsp brown sugar or honey

2 tbsp oil (sunflower or sesame)

1 tbsp cornstarch

3 tbsp water

Salt and pepper, to taste

Fresh spring onions or coriander to garnish (optional)

Instructions:

In a bowl, toss the beef strips with 1 tablespoon of soy sauce, the cornstarch, and 1 tablespoon of water. Let marinate for 15 minutes.

Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Add the sliced onions and sauté for 5-7 minutes, until soft and lightly browned. Remove from the pan and set aside.

In the same pan, add another tablespoon of oil and increase the heat. Add the marinated beef strips in a single layer. Cook quickly for 2-3 minutes, turning so they are browned but still tender.

Return the onions to the pan with the beef. Add the minced garlic, remaining soy sauce, oyster sauce, sugar or honey, and 2 tablespoons of water. Mix well to coat the beef and onions. Simmer over medium heat for 2-3 minutes.

Arrange the stir-fried beef with onions on a platter or plates. Garnish with fresh spring onions or coriander if desired. Serve with white rice for a complete and tasty meal.
