Ingredients:
500g chicken fillets, cut into strips (sticks or strips)
150g smoked bacon (or diced smoked chicken for a lighter option)
1 onion, sliced
2 tbsp old-fashioned mustard
200ml heavy (or light) crème fraîche
1 tbsp olive oil
1 tsp herbes de Provence
Salt and pepper, to taste
For garnish (optional):
Fresh parsley, chopped
Rice, pasta or steamed potatoes to accompany
Instructions:
Brown the bacon:
In a large hot skillet, fry the bacon without fat over medium heat until golden and crispy. Remove from the pan and set aside.
Sear the chicken:
In the same pan, add the olive oil and fry the chicken strips over medium heat. Season lightly with salt and pepper. Brown on each side for about 5 minutes, until nicely colored and almost cooked through. Remove and set aside.
Brown the onion:
Add the chopped onion to the pan (you can add a small knob of butter if necessary). Sauté until soft and slightly translucent.
Prepare the mustard sauce:
Lower the heat and add the old-fashioned mustard and the crème fraîche to the onion. Mix well to obtain a creamy sauce. Add the herbes de Provence to flavor.
Assemble the dish:
Return the bacon and chicken to the pan. Mix well to coat the pieces in the sauce. Simmer over low heat for 5 minutes so that the flavors blend and the chicken finishes cooking.
Serve hot:
Arrange the sliced chicken with mustard and bacon on plates. Garnish with chopped fresh parsley and serve with rice, pasta, or steamed potatoes for a complete and gourmet meal.
