Ingredients:
4 cups cooked chicken, shredded (rotisserie chicken works well)
2 cups Doritos, crushed (Nacho Cheese flavor recommended)
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of mushroom soup
1 cup sour cream
1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained
1 cup shredded cheddar cheese
1 tsp chili powder
½ tsp garlic powder
½ tsp onion powder
¼ tsp smoked paprika (optional)
Salt and pepper, to taste
Extra Doritos and cheese for topping
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish.
Prepare the Filling:
In a large mixing bowl, combine the shredded chicken, cream of chicken soup, cream of mushroom soup, sour cream, diced tomatoes with green chilies, 1 cup shredded cheddar cheese, chili powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.
Assemble the Casserole:
Spread half of the crushed Doritos in an even layer on the bottom of the prepared casserole dish. Top with the chicken mixture, spreading it evenly. Sprinkle the remaining crushed Doritos on top.
Add Toppings:
Sprinkle an additional ½ cup of shredded cheddar cheese over the top layer of Doritos.
Bake:
Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly, and the cheese is melted.
Serve:
