(Easy, chewy, and chocolaty cookies made with brownie mix)
Ingredients:
1 box (18-20 oz) brownie mix
2 large eggs
⅓ cup vegetable oil
1 tsp vanilla extract
½ cup chocolate chips or chunks (optional for extra chocolaty goodness)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Prepare the Dough:
In a large mixing bowl, combine the brownie mix, eggs, oil, and vanilla extract. Stir until well blended. The dough will be thick and sticky. If using, fold in the chocolate chips or chunks.
Shape the Cookies:
Scoop about 1 tablespoon of dough for each cookie and place it on the prepared baking sheet, leaving about 2 inches between each cookie.
Bake:
Bake in the preheated oven for 9-11 minutes. The cookies will look slightly underbaked in the center but will set as they cool.
Cool and Serve:
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy these rich, brownie-like cookies with a glass of milk!
