Ingredients:
1 cup unsalted butter, softened
1 cup creamy peanut butter
1 cup granulated sugar
1 cup brown sugar
2 large eggs
2 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 ½ cups chocolate chips
12 mini Reese’s peanut butter cups, unwrapped
Instructions:
Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix the wet ingredients: In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and vanilla extract, and beat until combined.
Add the dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in chocolate chips: Gently fold in the chocolate chips into the cookie dough.
Stuff the cookies: Scoop about 2 tablespoons of dough and flatten it into a disk. Place a mini Reese’s peanut butter cup in the center and wrap the dough around it, ensuring the Reese’s is fully enclosed. Roll the dough into a ball. Repeat with the remaining dough and peanut butter cups.
Bake the cookies: Place the stuffed cookie dough balls on the prepared baking sheet, leaving space between each cookie. Bake for 10-12 minutes, or until the edges are golden and the centers are slightly soft.
Cool and serve: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm for an extra gooey center!
