Ingredients:
For the blue velvet brownie batter:
1 cup all-purpose flour
1 cup granulated sugar
Β½ cup unsalted butter, melted
ΒΌ cup cocoa powder
2 large eggs
2 tsp vanilla extract
1 tbsp blue food coloring
ΒΌ tsp salt
12-15 Oreo cookies, broken into chunks
For the cream cheese swirl (optional):
4 oz cream cheese, softened
ΒΌ cup powdered sugar
1 tsp vanilla extract
For garnish:
Extra Oreos, crushed or halved for topping
Instructions:
Preheat the oven: Preheat your oven to 350Β°F (175Β°C). Line an 8×8-inch baking pan with parchment paper or grease it lightly.
Make the brownie batter: In a large bowl, whisk together the melted butter, sugar, and vanilla extract. Add the eggs one at a time, mixing well after each addition. Stir in the blue food coloring until you reach your desired shade.
Add dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
Add Oreos: Gently fold the broken Oreo chunks into the blue velvet batter. Spread the batter evenly into the prepared baking pan.
Optional cream cheese swirl: In a small bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Drop dollops of the cream cheese mixture onto the brownie batter and swirl gently with a knife or toothpick for a marbled effect.
Bake the brownies: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Garnish: While the brownies are still warm, press extra Oreo halves or crushed Oreos onto the top for extra crunch and decoration. Let the brownies cool completely in the pan.
Slice and serve: Once cooled, lift the brownies out of the pan using the parchment paper, slice into squares, and enjoy your vibrant blue velvet Oreo brownies!
