Ingredients
For the fritter dough:
150 g flour
2 eggs
20 cl milk
1 sachet vanilla sugar
1 tablespoon caster sugar
1 pinch salt
1 tablespoon rum (optional)
For the apples:
3 apples (Golden or Reine des Reinettes type variety), peeled and sliced ββinto thick slices
Juice of 1 lemon
For cooking and finishing:
Frying oil
Powdered sugar or icing sugar for sprinkling
Instructions
Prepare the fritter dough:
In a bowl, mix the flour, sugar powdered sugar, vanilla sugar, and a pinch of salt.
Add the eggs, then gradually incorporate the milk while mixing to avoid lumps.
Add the rum if desired, and let the dough rest for 20β30 minutes.
Prepare the apples:
Peel and core the apples, then cut them into thick slices (about 0.5 cm).
Sprinkle them with lemon juice to prevent them from browning.
Heat the oil:
Heat the frying oil in a large saucepan or deep fryer to about 170β180Β°C (340β360Β°F).
Dip and fry:
Dip each apple slice into the batter to coat.
Dip into the hot oil and fry for 2β3 minutes on each side, until golden brown.
Drain and sugar:
Remove the fritters with a slotted spoon and place on paper towels.
Immediately sprinkle with caster sugar or icing sugar.
Serve hot:
Enjoy the fritters while still hot or warm for maximum deliciousness.
