Kentucky Butter Cake Cookies Recipe
These cookies are a delightful twist on the classic Kentucky Butter Cake, featuring a soft, buttery cookie base and a sweet glaze that sets them apart. Perfect for dessert or as a special treat, they’re easy to prepare with a few simple ingredients.
Ingredients:
For the Cookies:
1 box of white cake mix
2 eggs (whisked)
1/3 cup melted butter
For the Glaze:
1/4 cup unsalted butter
1/2 cup granulated sugar
1 tbsp water
1 tsp vanilla extract
Optional: Powdered sugar for dusting
Instructions:
Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Prepare the Dough: Mix the cake mix, whisked eggs, and melted butter in a large bowl until a thick dough forms.
Shape the Cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake: Bake for 7-8 minutes until the edges are slightly golden. They may look slightly underdone but will firm up as they cool.
Cool: Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack.
Make the Glaze: In a small saucepan over medium-low heat, melt the butter with sugar, water, and vanilla, whisking continuously until the sugar dissolves (about 4 minutes).
Glaze the Cookies: Spoon about 1 teaspoon of glaze over each cookie while still warm. Let the glaze set, then dust with powdered sugar if desired.
Tips & Variations:
Don’t Overbake: The cookies should look soft when removed from the oven; they’ll firm up while cooling.
Experiment with Cake Mixes: Try yellow or chocolate cake mixes for a unique twist.
Serve Warm: These cookies are delicious when served slightly warm, enhancing their buttery flavor.
