Vegetable Beef Soup

Ingredients:

 

* 1 lb (450 g) ground beef

* 1 medium onion, diced (about 1 cup / 150 g)

* 2 cloves garlic, minced

* 3 cups (720 ml) beef broth

* 1 can (15 oz / 425 g) diced tomatoes

* 2 cups (300 g) frozen mixed vegetables

* 2 medium potatoes, diced (about 2 cups / 300 g)

* 1 cup (240 ml) tomato sauce

* 1 tsp (3 g) dried basil

* 1 tsp (3 g) dried oregano

* 1/2 tsp (3 g) salt

* 1/2 tsp (1 g) black pepper

 

Directions:

 

1. Brown ground beef with onion in a large pot over medium heat; drain excess grease.

2. Add garlic and cook 1 minute until fragrant.

3. Stir in beef broth, diced tomatoes, tomato sauce, potatoes, basil, oregano, salt, and pepper.

4. Bring to a boil, then reduce heat to low.

5. Simmer 20 minutes, stirring occasionally, until potatoes begin to soften.

6. Add frozen mixed vegetables and continue cooking 10–15 minutes until tender.

7. Adjust seasoning to taste and let soup rest 5 minutes before serving.

Tips:

 

* Swap frozen veggies for fresh if you have them—just sauté firmer ones a few extra minutes.

* Soup thickens as it cools; add a splash of broth when reheating for the perfect texture.
