Tortellini skillet

Ingredients

  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 bell pepper (red, yellow, or green), diced
  • 1 lb (450g) Italian sausage (mild or spicy), casings removed
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 package (9–12 oz) refrigerated cheese tortellini
  • 1 cup shredded mozzarella or Parmesan cheese
  • 2 cups fresh spinach (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Sauté Aromatics
    Heat olive oil in a large skillet over medium heat. Add the garlic and onion, cooking until fragrant and translucent, about 2–3 minutes.
  2. Cook Sausage
    Add the Italian sausage, breaking it into small pieces. Cook until browned and cooked through, about 5–7 minutes. Drain excess grease if necessary.
  3. Add Veggies
    Stir in diced bell peppers and cook for another 2 minutes, until slightly softened.
  4. Make the Sauce
    Add the diced tomatoes, heavy cream, broth, and Italian seasoning. Stir to combine and bring the mixture to a gentle simmer.
  5. Cook Tortellini
    Gently stir in the tortellini, ensuring they’re fully submerged in the sauce. Cover and cook for 5–7 minutes, stirring occasionally, until the tortellini are tender.
  6. Finish with Spinach (Optional)
    If using spinach, stir it in during the last 2 minutes of cooking, allowing it to wilt.
  7. Add Cheese
    Sprinkle mozzarella or Parmesan cheese over the top, cover, and let it melt for 2–3 minutes.
  8. Serve
    Garnish with fresh basil or parsley, and serve immediately with crusty bread or a simple green salad.
