Warm Spinach and Artichoke Dip

This Warm Spinach and Artichoke Dip is rich, creamy, and loaded with tender spinach and artichoke hearts. With garlic, butter, a hint of sherry, and a cheesy finish, it’s a classic appetizer that disappears quickly. Serve it with tortilla chips, crackers, toasted baguette slices, or fresh vegetables — it’s always a hit.


Ingredients

  • 4 tablespoons butter

  • 1/2 cup chopped onion

  • 2 packages (10 oz each) frozen spinach, thawed and well drained

  • 2 cans (8 oz each) artichoke hearts, drained and chopped

  • 1 1/2 cups heavy cream

  • 5 ounces soft garlic and herb cheese (such as Boursin or any similar soft cheese)

  • Pinch of salt and pepper, to taste

  • 2 tablespoons cream sherry (optional but adds wonderful depth)

  • 1/2 cup grated Parmesan cheese


Instructions

Step 1: Sauté the Onion

In a large skillet over medium heat, melt the butter. Add the chopped onion and cook until soft and translucent.

Step 2: Add Spinach and Artichokes

Add the drained spinach and chopped artichoke hearts to the skillet. Stir and heat through until everything is well combined and warmed.

Step 3: Make It Creamy

Pour in the heavy cream and add the soft garlic herb cheese. Stir gently as the cheese melts into the cream. Add a pinch of salt and pepper to taste.

Step 4: Add Sherry for Flavor

Stir in the cream sherry if using. Let the mixture simmer gently just long enough to thicken slightly and blend the flavors.

Step 5: Finish with Parmesan

Remove the skillet from the heat and fold in the grated Parmesan cheese. Mix until fully incorporated.

Step 6: Serve Warm

Serve this dip immediately while warm. It’s excellent with chips, sliced baguette, crackers, or fresh veggies.
