Slow Cooker Steak and Cheddar Potato Casserole

 Introduction

If you’re craving a hearty, stick-to-your-ribs dinner with minimal effort, this Slow Cooker Steak and Cheddar Potato Casserole is the answer. Tender chunks of beef, layers of golden potatoes, and plenty of melted cheddar come together in a rich, creamy sauce—all made in your slow cooker. It’s cozy, comforting, and absolutely perfect for busy weeknights or lazy weekends.

Ingredients

  • 2 lbs beef sirloin or stew meat, cut into 1-inch cubes

  • 2 tbsp olive oil (for browning)

  • 2 lbs Yukon gold or russet potatoes, thinly sliced

  • 1 medium onion, thinly sliced

  • 2 cloves garlic, minced

  • 1 cup beef broth

  • 1 cup sour cream

  • 1 can cream of mushroom soup (10.5 oz)

  • 2 tsp Worcestershire sauce

  • 1 tsp smoked paprika

  • 1 tsp salt (or to taste)

  • ½ tsp black pepper

  • 2 ½ cups shredded sharp cheddar cheese, divided

  • 2 tbsp chopped fresh parsley (for garnish, optional)

Instructions

Step 1: Brown the Beef

Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides (about 3–4 minutes per batch). This step adds flavor but can be skipped if you’re in a hurry.

Step 2: Layer the Ingredients

Grease the inside of your slow cooker. Layer half of the sliced potatoes and onions on the bottom. Season lightly with salt and pepper. Add half of the browned beef and sprinkle with 1 cup cheddar. Repeat layers with remaining potatoes, onions, beef, and another 1 cup cheddar.

Step 3: Make the Sauce

In a bowl, whisk together beef broth, sour cream, cream of mushroom soup, Worcestershire sauce, smoked paprika, garlic, salt, and pepper. Pour evenly over the layered ingredients in the slow cooker.

Step 4: Cook Low & Slow

Cover and cook on Low for 6–7 hours or High for 3–4 hours, until potatoes are tender and beef is fully cooked.

Step 5: Finish with Cheese

Sprinkle the remaining ½ cup cheddar over the top during the last 10 minutes of cooking. Cover until melted.

Step 6: Serve

Garnish with fresh parsley if desired. Serve warm with crusty bread or a crisp green salad.

Tips & Variations

  • Swap cheddar for pepper jack if you want a spicy kick.

  • Add veggies like peas, corn, or mushrooms for extra heartiness.

  • Use leftover steak or roast beef for an even faster version.

  • For a creamier finish, stir in a splash of heavy cream before serving.
