- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 bell pepper (red, yellow, or green), diced
- 1 lb (450g) Italian sausage (mild or spicy), casings removed
- 1 can (14 oz) diced tomatoes
- 1/2 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 package (9–12 oz) refrigerated cheese tortellini
- 1 cup shredded mozzarella or Parmesan cheese
- 2 cups fresh spinach (optional)
- Fresh basil or parsley, for garnish
Instructions
- Sauté Aromatics
Heat olive oil in a large skillet over medium heat. Add the garlic and onion, cooking until fragrant and translucent, about 2–3 minutes. - Cook Sausage
Add the Italian sausage, breaking it into small pieces. Cook until browned and cooked through, about 5–7 minutes. Drain excess grease if necessary. - Add Veggies
Stir in diced bell peppers and cook for another 2 minutes, until slightly softened. - Make the Sauce
Add the diced tomatoes, heavy cream, broth, and Italian seasoning. Stir to combine and bring the mixture to a gentle simmer. - Cook Tortellini
Gently stir in the tortellini, ensuring they’re fully submerged in the sauce. Cover and cook for 5–7 minutes, stirring occasionally, until the tortellini are tender. - Finish with Spinach (Optional)
If using spinach, stir it in during the last 2 minutes of cooking, allowing it to wilt. - Add Cheese
Sprinkle mozzarella or Parmesan cheese over the top, cover, and let it melt for 2–3 minutes. - Serve
Garnish with fresh basil or parsley, and serve immediately with crusty bread or a simple green salad.
