Ingredients:
4 medium potatoes, peeled and thinly sliced 

1 large onion, thinly sliced 

3 tbsp olive oil or vegetable oil 

2 tbsp unsalted butter 

1 tsp garlic powder 

½ tsp smoked paprika 

Salt and pepper, to taste 

Optional: fresh parsley or chives for garnish 

Instructions:

Peel and thinly slice the potatoes and onions. Use a mandoline for uniform slices, if available. Pat the potatoes dry with paper towels to remove excess moisture for better crisping. 




In a large skillet, heat the olive oil over medium heat. Add the butter and let it melt, swirling to coat the pan. 




Place the sliced potatoes in the skillet in an even layer. Let them cook undisturbed for 4-5 minutes to develop a golden crust on the bottom.

Add the sliced onions to the skillet. Gently toss the potatoes and onions together to combine. Season with garlic powder, smoked paprika, salt, and pepper. 




Reduce the heat to medium-low and cook, stirring occasionally, for 10-15 minutes, or until the potatoes are tender and golden brown, and the onions are caramelized.

For extra crispy potatoes, turn the heat back to medium-high for the last 2-3 minutes, stirring occasionally to prevent burning.

Transfer the potatoes and onions to a serving dish. Garnish with fresh parsley or chives if desired, and serve hot as a side dish or enjoy on their own.
