Ingredients
For the cake:
3 ripe bananas, mashed
150 g (3/4 cup) brown sugar
100 g (1/2 cup) melted butter
2 eggs
1 teaspoon vanilla extract
200 g (1 2/3 cups) flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 pinch salt
100 g (3/4 cup) pecans, roughly chopped
For decoration (optional):
A few whole pecans
Icing sugar for dusting
Instructions
1. Prepare the ingredients:
Preheat the oven to 180°C (350°F). Butter and flour a loaf pan or round cake pan.
Mash the bananas in a bowl until smooth.
2. Mix the wet ingredients:
In a large bowl, mix the mashed bananas, brown sugar, melted butter, eggs and vanilla extract. Whisk until smooth.
3. Incorporate the dry ingredients:
In a separate bowl, mix the flour, baking powder, baking soda and pinch of salt.
Gradually add the dry ingredients to the wet mixture, stirring gently.
4. Add the pecans:
Add the chopped pecans and gently mix to distribute evenly throughout the batter.
5. Bake the cake:
Pour the batter into the prepared pan. If desired, arrange a few whole pecans on top for decoration.
Bake for 40–45 minutes, or until a knife inserted in the center of the cake comes out clean.
6. Cool and decorate:
Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Dust with icing sugar before serving, if desired.
