Moist Banana Pecan Cake

Ingredients
For the cake:
3 ripe bananas, mashed 🍌
150 g (3/4 cup) brown sugar 🍬
100 g (1/2 cup) melted butter 🧈
2 eggs 🥚
1 teaspoon vanilla extract 🍦
200 g (1 2/3 cups) flour 🌾
1 teaspoon baking powder 🍶
1/2 teaspoon baking soda 🥄
1 pinch salt 🧂
100 g (3/4 cup) pecans, roughly chopped 🌰
For decoration (optional):
A few whole pecans 🌰
Icing sugar for dusting 🍬
Instructions
1. Prepare the ingredients:
1️⃣ Preheat the oven to 180°C (350°F). Butter and flour a loaf pan or round cake pan. 🔥
2️⃣ Mash the bananas in a bowl until smooth. 🍌
2. Mix the wet ingredients:
3️⃣ In a large bowl, mix the mashed bananas, brown sugar, melted butter, eggs and vanilla extract. Whisk until smooth. 🍬🧈🥚
3. Incorporate the dry ingredients:
4️⃣ In a separate bowl, mix the flour, baking powder, baking soda and pinch of salt. 🌾
5️⃣ Gradually add the dry ingredients to the wet mixture, stirring gently.
4. Add the pecans:
6️⃣ Add the chopped pecans and gently mix to distribute evenly throughout the batter. 🌰
5. Bake the cake:
7️⃣ Pour the batter into the prepared pan. If desired, arrange a few whole pecans on top for decoration.
8️⃣ Bake for 40–45 minutes, or until a knife inserted in the center of the cake comes out clean. 🕒
6. Cool and decorate:
9️⃣ Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
