(Soft peanut butter cookies with a creamy peanut butter filling)
Ingredients:
For the Cookies:
1 cup creamy peanut butter 

½ cup unsalted butter, softened 

1 cup granulated sugar
½ cup brown sugar 

1 large egg 

1 tsp vanilla extract 

1 ½ cups all-purpose flour 

½ tsp baking soda
½ tsp baking powder
¼ tsp salt 

For the Filling:
½ cup creamy peanut butter 

¼ cup unsalted butter, softened 

1 cup powdered sugar 

2 tbsp milk 

1 tsp vanilla extract 

Instructions:

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a large bowl, cream together the peanut butter, butter, granulated sugar, and brown sugar until smooth and fluffy. Add the egg and vanilla extract and mix well.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Roll the dough into 1-inch balls and place them on the prepared baking sheets about 2 inches apart. Flatten each ball gently with a fork to create a crisscross pattern.
Bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

In a medium bowl, beat together the peanut butter, butter, powdered sugar, milk, and vanilla extract until smooth and creamy. Add more milk if needed to reach a spreadable consistency.

Spread a generous amount of filling on the bottom of one cookie and top with another cookie to form a sandwich. Repeat with the remaining cookies.
