(A decadent, buttery grilled cheese stuffed with garlic shrimp and gooey melted cheese)
Ingredients:
8 slices of thick bread (Italian or sourdough works well) 

4 tbsp unsalted butter, softened 

2 cloves garlic, minced 

1 tbsp fresh parsley, chopped 

1 cup shredded mozzarella cheese 

1 cup shredded cheddar cheese 

For the Shrimp Filling:
½ lb shrimp, peeled, deveined, and chopped 

1 tbsp olive oil 

Salt and pepper, to taste 

½ tsp garlic powder
½ tsp dried Italian seasoning 

1 tbsp fresh lemon juice 

Instructions:

In a small bowl, mix softened butter with minced garlic and chopped parsley. Set aside.

In a skillet, heat olive oil over medium heat. Add the shrimp, season with salt, pepper, garlic powder, and Italian seasoning. Cook for 3-4 minutes, or until the shrimp turn pink and are just cooked through. Add the lemon juice, toss, and set the shrimp aside.

Spread garlic butter on one side of each bread slice. Place the buttered side down, and layer half of the bread slices with mozzarella and cheddar cheese, followed by a portion of cooked shrimp. Top with more cheese and cover with another slice of bread, garlic butter side up.

Heat a skillet or griddle over medium-low heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and crispy, and the cheese is melted and gooey. Press down lightly with a spatula for an even cook.

Slice and enjoy this warm, crispy, and cheesy garlic shrimp grilled cheese. Perfect with a side of marinara or garlic aioli for dipping!
