Double Layer Cookies with Cream Filling

 (Biscuits Double avec Crème), inspired by classic sandwich-style cookies!
Ingredients:
For the Cookies:
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup softened unsalted butter
3/4 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
For the Cream Filling:
1/2 cup softened butter
3 cups powdered sugar
2 tbsp milk or cream
1 tsp vanilla extract
Instructions:
Prepare the Dough: Mix flour, cocoa powder, baking soda, and salt. Separately, cream butter with sugars, then add eggs and vanilla. Gradually combine with the dry mixture to form a dough. Chill for 30 minutes.
Shape and Bake: Preheat oven to 350°F (175°C). Roll dough into balls, flatten, and bake for 10-12 minutes. Let cool completely on a rack.
Make the Filling: Beat butter, powdered sugar, milk, and vanilla until smooth.
Assemble: Spread filling on one cookie, then top with another to form a sandwich. Chill slightly to set.
