1 cup creamy peanut butter

1 cup butterscotch chips

2 cups chow mein noodles

1 cup mini marshmallows
½ cup roasted peanuts (optional)

Instructions:

In a microwave-safe bowl, melt the peanut butter and butterscotch chips together in 30-second intervals, stirring in between until smooth.


Once melted, stir the mixture well to ensure it’s fully combined. Let it cool slightly for about 2 minutes.


Gently fold in the chow mein noodles and mini marshmallows until they’re evenly coated with the peanut butter mixture.


If using, add the roasted peanuts to the mixture and stir to distribute them evenly.


Line a baking sheet with parchment paper. Drop spoonfuls of the mixture onto the sheet, shaping them into small mounds or “haystacks.”


Let the haystacks sit at room temperature for about 20-30 minutes, or refrigerate for 10-15 minutes until they are firm.


Once set, transfer the haystacks to an airtight container for storage. Enjoy these delightful treats!
