Country Ranch Green Beans and Potatoes with Turkey Bacon

Ingredients:
1 lb fresh green beans, trimmed 🥬
1 ½ lbs baby potatoes, halved or quartered (Yukon gold or red potatoes) 🥔
6 slices turkey bacon, chopped 🥓
1 small onion, finely chopped 🧅
2 cloves garlic, minced 🧄
1 packet (1 oz) ranch seasoning mix 🌿
2 tbsp olive oil 🛢️
1 tsp dried thyme or rosemary (optional) 🌱
Salt and pepper to taste 🧂
Fresh parsley for garnish (optional) 🌿
Instructions:
1️⃣ Boil the potatoes: In a large pot of salted water, boil the halved or quartered potatoes for about 10-12 minutes, or until they are fork-tender. Drain and set aside. 🥔💧
2️⃣ Cook the turkey bacon: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped turkey bacon and cook until crispy, about 5-6 minutes. Remove the bacon and set it aside on a paper towel-lined plate. 🥓🔥
3️⃣ Sauté the onion and garlic: In the same skillet with the leftover bacon fat, add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute. 🧅🧄
4️⃣ Cook the green beans: Add the trimmed green beans to the skillet along with 1 tablespoon of olive oil. Sauté the green beans for 5-6 minutes until they start to become tender but still crisp. 🌿🥬
5️⃣ Add the ranch seasoning and potatoes: Sprinkle the ranch seasoning mix over the green beans and stir to coat. Add the cooked potatoes, thyme (if using), and stir to combine everything. Let it cook for an additional 3-4 minutes to let the flavors blend. 🌱🍲
6️⃣ Combine with bacon: Stir in the crispy turkey bacon and adjust seasoning with salt and pepper as needed. 🥓🧂
7️⃣ Garnish and serve: Garnish with fresh parsley if desired, and serve warm. Enjoy your delicious country-style green beans and potatoes with turkey bacon! 🍽️🌿
